egg bull's eye - with an Indian twist


Bull's-eye was always boring for me. I didn't like it when I was a kid. I was forced to have it as breakfast , every Sunday with toasted bread. I came across this recipe in Facebook. This recipe makes the egg bull's-eye quite interesting.



Ingredients
  1. 4 Tbsp finely chopped onions
  2. 1 Tbsp finely chopped tomato
  3. 1 green chili , seeds removed and chopped finely
  4. 3 tsp oil
  5. 1 egg
  6. 1 tsp water
  7. 1 slice of bread
  8. a tsp of garlic butter or ordinary butter(optional)
  9. 2 pinches of garam masala
  10. salt to taste
Method
  • Heat an 8 inch non-sticky pan on medium high heat. When warm pour 2 tsp oil. When the oil is hot add the 4 Tbsp chopped onions and sauté for 2 minutes.

  • In the meantime , heat a griddle and toast the bread with butter(if using).






  • When the onions are sautéed , add in the chopped tomatoes and garam masala and cover and cook for a minute. (Sauté the tomatoes to the consistency you like)




  • Open the lid add salt and stir. Check for salt and when done ,spoon this on to the toasted bread.


MAKING THE EGG BULL'S-EYE

  • The same pan in which the onion masala was made can be used or if a lot of masala has stuck at the bottom , use another 8 inch pan.
  • Heat the non-sticky pan on medium high heat. When warm pour 1 tsp oil into it.Swirl the oil to coat the pan. Immediately , crack an egg into the pan and then pour 1 tsp water into the pan (don't pour it on the cracked egg , pour the water around it).

  • Cover with a lid reduce the heat to medium and cook for exactly 1 minute.
  • Exactly after 1 minute , the egg will be cooked  slightly crispy underneath and will have very thin white film on top of the yolk. 




  • Put this egg bull's-eye on top of the onion tomato mixture and server hot.



  • When you cut through the center of the egg , the yolk will ooze out. That's just the way I want.





NOTES

  • If the kids don't like the onion tomato masala , add grated cheese on top of the toasted bread and top it with the egg bull's-eye.
