Beef stock that we get from cooked beef , contains a lot of fat. The amount of fat depends on the cut of the beef. This fat can be easily separated. There are many  fat separators available in the market.I have used this old-fashioned way of separating the fat from the stock.

വെള്ളരിക്ക പച്ചടി - tiny cucumber slices in coconut-yogurt sauce

This is one of the curries , my mother makes . It's ingredients are almost the same as pullissery , except that there is no turmeric and also mustard seeds is ground along with the coconut. My mother insists that the winter melon (vellarika) be chopped into tiny pieces. The sizes of the chopped vegetables in various curries , does matter to her . Though this is made with vellarika , I make it with zucchini squash when I don't get the former.

 Cutlets , sallas and ketchup was my favorite for marriages and other special functions in the family. My mother-in-law tries to sneak in  a lot of vegetables into the cutlets that she makes. Her cutlets are very famous. This is her recipe. She uses any vegetable she can get her hands on. She even uses വാഴ കൂമ്പു( plantain flower) and yet make tasty cutlets .

FALOODA - with chia seeds

The very few times , I have had  falooda , I would tell myself , "this is semiya payasam sans the cardamom , jelly , fruits , nuts and icecream". I never thought of making it though , until I made chia pudding . The texture of the soaked chia seeds was so much like the seeds that is used in falooda. Had some leftover chia pudding and  some jelly( my kids fav!) , in the fridge. Well ! it seemed like a good time to make falooda. I just had to make the payasam, toast some nuts and chop some apples(only fruit that I had in hand). I didn't have icecream , and didn't want go to the store just for buying the icecream. Who says you need to have all of the ingredients on hand , just put it all together and make your own signature falooda. So this falooda is sans the scoop of icecream . I was sure that my husband would comment , "but doesn't falooda have icecream in it ". And that's the start of another interesting food argument.
