BIRIYANI SALAD

Basically made of just onion ,  green chili and curd.  But the mother in me can't help but  sneak in a few more veggies.

INGREDIENTS
  1. 1/4  cup finely chopped salad cucumber , skin-on or skin peeled
  2. 1/4 cup finely chopped onion
  3. 1/4 cup finely chopped tomatoes(if the curd is sour enough , no need to add)
  4. 1 green chili , seeds removed
  5. heaping 1/2 cup thick curd(I have used yogurt made from whole milk)
  6. water for diluting
  7. salt to taste 
  8. coriander leaves (optional)
METHOD

  • Wash the vegetables. If you are planning it way ahead , soak the cucumber(whole) and tomatoes in water for some time. 
  • Dice the vegetables into fine , small cubes. I use a Vidalia chopper to do that. (A great task for the kids)

  • Transfer it to a bowl , big enough to accommodate everything.

  • Add the curds. Mix well. Add the green chili. Add coriander leaves if using.Add sufficient salt amd mix thoroughly.Do not dilute it now.Keep it covered for 30 minutes.Then after 30 minutes check for salt and dilute as required.This way you can judge the salt correctly.
                                    





  • Add salt . Cover and keep in the fridge until ready to serve.

ONION-YOGURT SALAD
Kids like the salad without cucumber and onion. Here is the recipe:-
  1. 1/4 thinly sliced onions
  2. 1/2 cup yogurt 
  3. water to dilute
  4. 2 green chilies, seeds removed
  5. salt to taste- 1/2 tsp



NOTES


  • Use your favorite choice of vegetables. I have made salad with grated, julienned or small cubed carrots.
  • Can also  add capsicum.

Always wondered if these choppers really do work. Please let me know if they make our lives easier or has the maintenance makes it more difficult.

I am not a gadget person , but a friend suggested this to me . Unlike seeing ads on the TV , when a friend ,you know have used and suggests this to you , it's different . The chopper is really good , not much maintenance required and you get nice , neat uniform chopped pieces. A little pressure needs to be applied , but you will learn the tips and tricks as you use it a number of times.
Whatever gadget you buy don't quit and use it a number of times and give yourself time to learn its tricks. Previously I had bought a few other gadgets and stopped using it because it was not working as shown on TV. But over the years I have learnt that you have to give it some time and learn the tips and tricks.
