BURRITO

chicken burrito

I feel , Mexican food is very close in taste to Indian food , maybe because cumin powder is used in the recipes.
Ingredients
  1. 2 flour tortillas(Large)
  2. 4 chicken tenderloins(about 350 gms, boneless)
  3. 1 tsp each of Kashmiri chili powder, cumin powder, coriander powder
  4. 1 Tbsp oil
  5. 3 Tbsp. thick yogurt beaten with 3/4 tsp of sugar(this is instead of sour cream, though sour cream tastes better )
  6. handful coriander leaves chopped
  7. 2 cups  chopped romane lettuce(can use cabbage)
  8. 3 tsp lemon juice
  9. salt to taste


Method

  • Beat the yogurt and keep aside.
  • Cut the chicken into small bite size pieces and keep aside.
  • Heat a pan( I have used a 10 inch non-sticky pan) , on medium high heat.When warm , add oil . 



  • When the oil is hot , add the chicken.





  • Stir the chicken and cook on medium high heat , till the chicken is cooked and almost dry(about 7 minutes).




  • When the chicken is cooked and no longer pink , add all the three powders (coriander , chili and cumin) , stir well.




  • Add chopped coriander leaves , stir well . 





  • To this add salt . Stir and finally add 3 tsp lemon juice . Turn off the stove and keep aside.
  • In a plate , place a tortilla .


  • Put the chicken along the center line of the tortilla.
       


  • On top of the chicken add the chopped lettuce.


  • On top of the lettuce , put a layer of the beaten yogurt.


  • Now it's time to make the burrito roll.
  • Fold in the two smaller sides.



  • Now start rolling tightly from the longer side. Use both hands.





  • Cut the tight roll with a knife in a slanting position.



  • Good as a lunch box menu.

          




NOTES
  • Don't have lettuce ??, use cabbage instead.
