BURRITO
Ingredients
- 2 flour tortillas(Large)
- 4 chicken tenderloins(about 350 gms, boneless)
- 1 tsp each of Kashmiri chili powder, cumin powder, coriander powder
- 1 Tbsp oil
- 3 Tbsp. thick yogurt beaten with 3/4 tsp of sugar(this is instead of sour cream, though sour cream tastes better )
- handful coriander leaves chopped
- 2 cups chopped romane lettuce(can use cabbage)
- 3 tsp lemon juice
- salt to taste
Method
- Beat the yogurt and keep aside.
- Cut the chicken into small bite size pieces and keep aside.
- Heat a pan( I have used a 10 inch non-sticky pan) , on medium high heat.When warm , add oil .
- Stir the chicken and cook on medium high heat , till the chicken is cooked and almost dry(about 7 minutes).
- When the chicken is cooked and no longer pink , add all the three powders (coriander , chili and cumin) , stir well.
- Add chopped coriander leaves , stir well .
- To this add salt . Stir and finally add 3 tsp lemon juice . Turn off the stove and keep aside.
- In a plate , place a tortilla .
- Put the chicken along the center line of the tortilla.
- On top of the chicken add the chopped lettuce.
- On top of the lettuce , put a layer of the beaten yogurt.
- Now it's time to make the burrito roll.
- Fold in the two smaller sides.
- Now start rolling tightly from the longer side. Use both hands.
- Cut the tight roll with a knife in a slanting position.
- Good as a lunch box menu.
NOTES
- Don't have lettuce ??, use cabbage instead.
