EGG BHURJI
- 1 medium onion chopped finely(100 gms.)
- 1 medium tomato chopped finely(75 gms. )
- 2 Tbsp oil
- 2 green chili , seeds removed and chopped
- 1 tsp chopped ginger
- 2 eggs
- handful of coriander leaves chopped
- 1/4 tsp turmeric
- 1 tsp Kashmiri chili powder
- 1 tsp fancy garam masala
- salt to taste
Method
- Chop the onions.
- Now add the turmeric , chili powder and garam masala , stir and sauté for a minute.
- Now add the chopped tomatoes. Sauté , cover and cook for atleast 5 to 7 minutes until tomatoes are mushy and the whole onion tomato mixture has cooked well.
- Meanwhile crack 2 eggs , add salt and beat it with a fork. When the onion-tomato mixture is cooked , add salt and stir well. Lower the heat and add the beaten egg into the mixture.
- Stir well . At this point the mixture will be wet . When the egg has been mixed in well , increase the heat and keep stirring , till the egg become fluffy. Turn off the stove , add chopped coriander leaves, check for salt .
- Serve it with bread. I had leftover burger buns so I served using that.
NOTES
- Salting:Salt the eggs and onion-tomato mixture only as required. Obce the salt is too much , nothing can be done. If its less , more can be added.
- The above mixture fills three sets of burger buns.
- The onions and tomatoes can be chopped finely using a chopper. I use a vidalia chopper for that.
