KRISPY FRIED CHICKEN
My mother used to make these when we were kids. She made it with chicken with bones. That is tastier than boneless chicken . After KFC chicken became famous , we use to refer to this as Mummy's KFC chicken.

- 1kg.boneless chicken ( I have used chicken tenderloins)
- 6 slices of bread pulsed in the blender to make bread crumbs
- 2 eggs
- oil for frying
For marinating:
- 2 Tbsp chili powder
- pepper powder as per taste
- 1 tsp garam masala(optional)
- 1 Tbsp. ginger-garlic paste
- 4 Tbsp yogurt (If the curd is not thick, strain and use it)(can add lemon juice if the curd is not sour)
- salt to taste, 2-1/2 tsp (go easy on the salt. Fried things require less salt)
METHOD
- Beat the eggs and keep aside.Layer the bread crumbs in big plate. When its ready to fry. Set up a breading station with the marinated chicken , bread crumbs and beaten egg.
- when the bread crumbs plate is full , dust each piece with the crumbs on all side and drop it one by one into the hot oil.
- Fry one side for 3 minutes and turn over to the side , fry for 2 minutes till lightly golden brown. Control the temperature of the oil during this time by alternating between high and medium.
- Drain into a paper lined plate.
- Serve with no-mayo coleslaw.
BAKING INSTEAD OF FRYING
- If you are planning to bake , add 1 tsp ginger powder instead of the ginger-garlic paste .
- Bread it and layer it on a baking tray.
- Bake in a pre-heated 400 degree F oven for 25 minutes. No need to turn over.
NOTES
- The chicken can be marinated overnight without the salt. The salt can be added just before frying. Adding salt and keeping it marinated overnight will bring out the liquid in the chicken, which we do not want in this case.
- The baked chicken is not as crispy as the fried one. But on days when I am short of time , baking these are a breeze.
