SEPARATING EGG YOLKS FROM WHITES

separating eggs
Most of the cooking videos shows the method of separating an egg by tossing the yolk back and forth from one shell to another. I don't have the confidence to try that lest the sharp edges pierce the egg yolks. Using hands is my best and foolproof way of separating eggs.

Things required:

  1. eggs
  2. 3 bowls
  3. fork for cracking the egg open

Method

  • Always use clean , dry bowls for the egg whites , without any hint of fat.
  • Crack open the egg using a fork. Wipe clean the shells of the egg using your thump. My mother always does this. She often says that a lot of the white remain in the shells . Do not waste that.

  • Using your hands fish out the egg yolk and put it in another bowl.

  • Transfer the egg white into a separate bowl.

  • Do not crack open all the eggs first and then start to separate. Crack open an egg into a bowl , fish out the yolk with your hand , put it into  a separate bowl , transfer the white into another bowl and then continue with the next egg. Always break each egg separately . If you crack all the eggs together in one go , if there is one spoiled egg or if the yolk cracks then separating the eggs will be of no use. Never make this mistake.  Even a little bit of the yolk will prevent the whites from whipping stiff.

NOTES
  • I take out the eggs the eggs from the refrigerator and separate . If it's room temperature eggs , be more gentle with it.
