BREAKFAST IN A BOWL

Sunday breakfast is always bread and egg. This breakfast bowl was a nice twist to the usual bread and egg.

INGREDIENTS

  1. 1/2 cup of chopped mushrooms and onions
  2. 1/4 cup chopped capsicum
  3. 1 egg
  4. 1/2 tsp all purpose flour
  5. 1 Tbsp water or milk
  6. chili flakes as per taste
  7. 1/8 tsp Italian seasoning 
  8. salt as per taste
  9. pepper as per taste
  10. 2 tsp oil
  11. 1 slice bread sliced into cubes
  12. 2 Tbsp water 
  13. salt and pepper for sprinkling on the poached egg
METHOD
  • Heat a pan and add the bread cubes. Toast till they are light brown and crunchy. Transfer to a bowl.



  • Wipe the pan of any remaining breadcrumbs . In the same pan add oil , when the oil is hot add the chopped onions. Sauté till slightly brown.


  • Now add the chopped mushrooms and capsicum. Saute for a minute , add chili flakes , add salt . Stir and sauté. Add in the Italian seasoning and stir.

       

  • Then sprinkle the all-purpose flour . Stir well.

  • Now add milk or water. Stir till the right consistency. It won't take much time. Be on close watch. 




  • Transfer this to the bowl with the toasted bread cubes.


  • Now ,time to poach the egg. Heat the pan to the heat. It will coated with the white sauce , but that's ok. Break the egg into the pan . Pour 2 Tbsp water. Cover and cook on high heat for a minute. By now  the egg white will be cooked and set, and will cover the yolk. The yolk will be soft  and jiggly inside. Transfer the egg and place it on top of the mushroom gravy.




         


  • Sprinkle with salt and pepper. Serve hot.


NOTES

  • Add a handful of chopped spinach leaves , while sauteeing the mushrooms. Its a good way to sneak in some greens.
