GINGER - GARLIC PASTE - frozen cubes


Once you have these cubes of ginger garlic paste in the freezer , it becomes so much easier to make curries. Just pop them out of the freezer and throw them into the pan while sauteing.

INGREDIENTS

1:3 is the ratio of ginger to garlic that I use for making the paste.

  • 3 cups peeled garlic(1 cup is appr. 375 gms. )
  • 1 cup ginger peeled and chopped(125 gms)
  • Flexible ice cube trays
METHOD

  • Put the 3 cups garlic in a mixie.




  • Grind this into as fine a paste as possible.  Don't worry if there are chunks here and there. There is more grinding to do.No need to add water. When there are 3 cups of garlic , there is enough water content in the garlic to grind to a paste.


  • Now add the 1 cup of chopped ginger.



  • Grind to a fine paste.


  • Transfer these into the ice cube trays. There will some leftover paste . Transfer that to a box and refrigerate it and use  that first before using the cubes.


  • Cover the ice cube trays with a plastic wrap and put in the freezer to freeze the cubes.


  • The next day take the ice trays out . Keep it outside for about 5 minutes. Now pop out the cubes into a storage box.


  • Put the boxes back in the freezer.


NOTES 


  • No need to thaw these cubes , just throw them in while sauteing . They will gradually.
  • In my ice tray , 1 cube is 1 Tbsp .
