COOKING BEEF


This is how my mother cooks beef. She makes a variety of dishes from this basic cooked version.


INGREDIENTS:
  1. 1 kg beef 
  2. 1 onion chopped(125 gms.)
  3. 1 pod garlic, skin peeled, chopped
  4. a small piece of ginger, grated finely
  5. a few curry leaves
  6. 3 green chilies
  7. 1 tsp pepper powder
  8. 1/2 tsp turmeric powder
  9. 1 tsp  fancy garam masala or garam masala
  10. salt to taste(1-1/2 tsp)
METHOD
  • I have used a junior prestige pressure pan for cooking this.
  • Cut the beef into small pieces. Put all of the above along with the beef into a pressure cooker. Hand mix it well.




  • Pressure cook it for 3 whistles  on medium high flame. No need to add water.
  • The cooking time depends on the type of beef. After the pressure goes off , open and check. If it requires more cooking ,put it for one more whistle. 


  • I store this cooked beef in the fridge and use it to make , beef pan roast , beef stew ,beef curry.


NOTES
  • I usually use stew cut beef ,its usually eas to chop and cook. Occassionally I buy chuck roast beef .Chuck roast beef needs more cooking time. So cook for 6 whistles and on medium heat for 5 minutes.
  • If the meat is not very tender , add 1 tsp vinegar , while cooking.
  • Beef contains a lot of fat. If you don't want the fat , keep the cooked and cooled beef in the refrigerator for a few hours. The fat will rise to the top and harden. Spoon out the hardened fat.
  • Store the cooked beef in a wide pan.Storing it this way help to spoon out maximum amount of fat.
