Utahappam
Another favorite of my dad's , other than rava dosa.


INGREDIENTS : the measurements of the ingredients depends on the number of uthappam you want to make.
  1. Dosa batter
  2. onions chopped 
  3. 1 green chili , seeds removed and chopped finely
  4. small piece of ginger chopped(optional)
  5. coriander leaves chopped
  6. curry leaves chopped finely
  7. Tomato , chopped finely
METHOD
  • Chop the above ingredients and keep aside.

  • Heat the griddle on medium high heat , when moderately hot , pour a ladleful of the dosa batter. Do not spread it . Let it naturally take shape. Put handful of the chopped mixture. Topping with the mixture , helps the batter to spread a little . 
  • Sprinkle with oil if required. 
  • Close and cook for a minute on medium low heat for a minute.






  • After a minute , open lid and flip over the uthappam. Cook for a minute with the lid closed. 


  • Serve with chutney.
