UTHAPPAM
Another favorite of my dad's , other than rava dosa.
INGREDIENTS : the measurements of the ingredients depends on the number of uthappam you want to make.
- Dosa batter
- onions chopped
- 1 green chili , seeds removed and chopped finely
- small piece of ginger chopped(optional)
- coriander leaves chopped
- curry leaves chopped finely
- Tomato , chopped finely
METHOD
- Chop the above ingredients and keep aside.
- Heat the griddle on medium high heat , when moderately hot , pour a ladleful of the dosa batter. Do not spread it . Let it naturally take shape. Put handful of the chopped mixture. Topping with the mixture , helps the batter to spread a little .
- Sprinkle with oil if required.
- Close and cook for a minute on medium low heat for a minute.
- After a minute , open lid and flip over the uthappam. Cook for a minute with the lid closed.
- Serve with chutney.
