BEEF PAN ROAST
If you have cooked beef in your fridge , this can be made in a jiffy.

- 2 cups cooked beef
- 1 medium sized onion, thinly sliced
- 1 tsp pepper
- 1 tsp fancy garam masala
- a few curry leaves
- salt to taste
- 2 Tbsp oil
Method
- Slice the onions as thin as possible.
- Heat a non-sticky pan on medium high heat. When warm add the oil . When the oil is hot add the onions. Fry the onions until they turn slightly brown. Add salt to quicken the process. Lower the heat if needed.
- When the onions are light brown , add the beef . The beef should not be accompanied by any stock . Leave the stock for curries. Skim any fat if required.
- Add 1 tsp pepper powder and 1tsp fancy garam masala. Add curry leaves. Check for salt.
- Leave the beef to roast on the bottom for a while, about 5 minutes on medium low heat. Turn off.
- Roast it longer to to get a dark brown color.
- Beef pan roast is ready.
NOTES
- The main flavor of this dish comes from the onions and pepper.
- For larger quantities, below is the recipe :
- 1 Kg cooked beef
- onions sliced, 500 gms
- 2 Tbsp. coriander powder
- 1/2 tsp turmeric powder
- 2 tsp chili powder
- 1/4 tsp each of clove, cardamom, and cinnamon powder
- 1 tsp cumin powder
- 3/4 tsp perumjeerakam powder
- 1/2 tsp each of nutmeg and fenugreek powder
- 1/2 tsp star anise powder
- 2 Tbsp vinegar or 2 Tbsp. lemon juice
- 6 curry leaves
- salt to taste
- 4 Tbsp. oil
- curry leaves for garnishing
