BEEF POTATO CURRY
If you have cooked beef in the fridge, this curry is easy to assemble and good with rice and chappati.
INGREDIENTS
- 2 cups cooked beef
- 1/2 of a medium-sized onion, chopped
- 2 small potatoes cubed
- 4 garlic cloves, chopped
- 2 tsp coriander powder
- 1 tsp chili powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- a few curry leaves
- 1 cup beef stock with fat removed or water
- salt as required
- 2 tsp oil
METHOD
- Heat a pressure cooker; when warm, add oil; when the oil is hot, add the chopped onions and garlic.
- Let the onions brown slightly. Then add the spice powders. Stir it.
- Add the cubed potatoes. Add the beef. (Mine was refrigerated, so I like to cook it along with the potatoes). Add water or stock.
- Bring to a boil. Check for salt. Add curry leaves. Close the lid and cook for 1 whistle.
- Serve warm with rice or chappatis.
BEEF_POTATO CURRY WITH COCONUT MILK
- Add 1/2 cup of coconut milk to the above curry, squeezed from 1/2 cup grated coconut. The amount of coconut milk depends on how thick or thin the curry should be.
- The recipe can be doubled or tripled.
