SEPARATING FAT FROM BEEF STOCK

Beef stock that we get from cooked beef , contains a lot of fat. The amount of fat depends on the cut of the beef. This fat can be easily separated. There are many  fat separators available in the market.I have used this old-fashioned way of separating the fat from the stock. 


METHOD

  • After cooking the beef , drain out the pieces , using a slotted spoon. Transfer it to a bowl and keep aside. Do this when the beef is hot . When it cools , the fat will harden and it will be difficult to separate.



  • Transfer the stock into a bowl or a measuring cup. Let it cool .When cooled , refrigerate it. Let it sit for a few hours.

  • The fat will come up to the top and solidify in the fridge.


  • Scoop out the fat and the stock is good to be used in curries.
