SALLAS- onion salad

Sallas or sarlas is the Malayalam word for salad. When I was a kid , this was my favorite salad that was served, usually with cutlets, for marriage ceremonies. It is similar to the pickled onions served with biriyanis. I like to use vinegar for this salad.


INGREDIENTS
  1. 2 medium sized onions , very thinly sliced
  2. 6 green chilies , seeds removed and sliced thinly
  3. 5 to 6 tsp vinegar
  4. salt to taste( go easy on the salt , the sourness should stand out in the salad)
METHOD

  • If you are planning to use the salad right away , soak the sliced onions in icy cold water for atleast 10 minutes and then squeeze the water out. This reduces the pungent aftertaste of the onions. If not using the salad right away , there is no need of the above mentioned method. Just prepare the salad 2 days ahead and store it in the fridge. the onions will naturally lose its pungent aftertaste.
  • Slice the onions very thinly. Slit the green chilies , add the vinegar and finally the salt. 
  • Give it a good mix , using your hands.  Store in the fridge. Thaw it for 30 minutes before serving.





  • Its also good with fish fries and biriyanis too. 

NOTES
  • There is another option of add salt to he onions and let it sit for sometime and then squeeze out the juice and then use the onions but I like the soaking in icy cold water option.
