MUESLI വിളയച്ചത് ( Muesli cooked coconut-jaggery mixture)

Muesli is more prevalent in  Europe, and granola is in America. It's just my assumption. Anyway, I did search for the difference between muesli and granola, and this is what I understood. The main difference between muesli and granola is that while both are made of grains, nuts, seeds, and dried fruits, muesli is unbaked, while granola is baked with a sweetener. Muesli is usually consumed with hot liquids or milk. 
My brother got a box of muesli from Dubai. My mother didn't know what to do with it. I suggested using the muesli and making something similar to avval vellayichathu. Voila! It turned out to be tasty. Well, it cannot be eaten as a healthy breakfast, though!. For us, muesli vellayichathu is a sweet dessert.

INGREDIENTS: I have yet to follow any exact measurements here. The amount of jaggery syrup depends on how sweet the end product should be.
  1. Jaggery Syrup - make ahead(from 125 gms. of jaggery)
  2. shredded coconut(2 cup, 160 gms.)
  3. muesli - 3 cups
  4. 1/4 tsp salt
  5. 3 tsp lemon juice
METHOD
  • Heat jaggery syrup in a wok. Bring it to a boil.



  • Add in the shredded coconut and salt. Stir and cook on high flame till the coconut is no longer wet.



  • Add in the muesli and stir well till the muesli is nicely coated with the coconut jaggery mixture. Finish it with the sprinkle of lemon juice. Let it cool and store it in an airtight container.


  • I like to chop some ripe bananas along with it and have it as a dessert.

NOTES

To make your own muesli - 

INGREDIENTS - makes 3 cups

  1. 1 cup dried fruits, chopped ( I like to use dried figs)
  2. 1 cup mixed nuts, chopped
  3. 1 cup oats, toasted
