KAYA(PLANTAIN) AND BEEF

beef and kaya
This is a nice combination that's my dad's favorite. Some , add a tad amount of beef to flavor up the plantains and some, add the plantains to increase the amount of the curry. Either way it's tasty. I like it with rice and moru curry.


INGREDIENTS
  1. 2 large plantains(raw ethakaya about 500 gms) , skin peeled and cubed
  2. 2 cups cooked  beef ,or use as per your choice
  3. 2 Tbsp oil
  4. 1/2 of a medium sized onion chopped finely
  5. 4 garlic cloves chopped
  6. 6 to 8 curry leaves
  7. 1 cup water
  8. 1 tsp coriander powder
  9. 1 tsp turmeric powder
  10. 2 tsp red chili flakes
  11. salt to taste

METHOD
  • Peel and chop the plantains. I have used a Vidalia chopper to do that. Use the bigger blade for chopping the plantains.

  • I have used a pressure cooker to cook the plantains. Put the plantains in , add 1 cup water , add salt and cook on medium high for 1 whistle and on low for 10 minutes. After opening the cooker , check the plantains for salt  and add if required. Its difficult for the plantains to absorb salt after sautéing.


  • Allow the pressure to release naturally. Meanwhile chop the onions , garlic and curry leaves.

  • Heat a wok(cheena chatti , kadai) on medium high heat. When warm add 2 Tbsp oil , when the oil becomes hot add the chopped onions , garlic and curry leaves.






  • Sauté the onions till translucent. Then add the spice powders and stir well.









  • If the beef has been kept in the fridge , add the beef first and heat it up, check for salt . Then add the cooked plantains and stir well . Turn off the stove.







  • Cover and keep for atleast 30 minutes. Serve with steaming hot kuthari(red matta rice) and moru curry.
