BOILING EGGS USING SAUCEPAN

INGREDIENTS
  1. 4 eggs
  2. 8 cups water
  3. 1/4 tsp salt
METHOD
  • In a saucepan , pour in the water and put the eggs. 
  • Bring to a boil. Turn off and keep covered for 12 minutes.



  • Drain the water and allow the eggs to cool. When the eggs are cool enough to handle, peel the. If you want to peel the eggs immediately, pour in normal tap water into the pan , let cool  and drain. 
  • Don't keep it longer. Peel the eggs while still warm, yet cold enough to touch. If the eggs become too cold, it becomes too difficult to peel. So don't wait too long. 




HARD BOILED EGGS USING THE PRESSURE COOKER- this method uses the minimum amount of water; I do not prefer this method. The eggs change color slightly, when I peel them. I do not know the reason why. This method uses the least amount of water. 

THINGS REQUIRED

  1. 4 eggs
  2. pan for placing the eggs
  3. 2 cups water 
  4. pressure cooker with a trivet

METHOD

  • Fill a pressure cooker with 2 cup water. Place  a trivet along with a pan . Place the eggs . Close the lid and put the weight. Turn on the stove to high and cook for 1 whistle. Turn off the stove and keep it so for 12 minutes.
  • After 12 minutes , open , if you want to shell out the eggs right away , then immerse them in cold water for 1 minute and peel. If not in a hurry , the just keep it aside till cool enough to peel.







PEELING THE EGGS
  • Peeling hard boiled eggs, is very easy. The shell comes out easily in one go. But if you ever find it hard, here are a few tips.
  • Do no not discard the water in which the eggs have been cooled. Keep it along the side where you are cracking the eggs.
  • Tap the egg all over against the counter surface, then roll it gently back and forth a few times on the counter until cracked all over.
  • Begin peeling from the end with the air pocket so that you can get your fingers under the shell without digging into the egg. If it is too hard , dip the cracked egg in the water in the saucepan and then try peeling again.





  • The cracked shell will come off in strips attached to the thin membrane.




NOTES

  • Adding salt to the water can minimize the mess, if the egg cracks while cooking. 
  • The unpeeled eggs can be refrigerated for up to 3 days.
  • I have tried putting the eggs in boiling water all at once and simmer boiling for 12 minutes, then drain, change the water, keep for a minute , peel and use. The boiled eggs are a little harder than when using the above method .
  • I have felt that egg boiled in water, immersed in a pan , yields softer boiled eggs. 
  • The eggs are easier to peel when they are hot enough to handle. So don't keep in cold water , longer than 1 minutes.
