PRAWNS STIR FRY




This is an easy one to make. Not everyone likes gravy  side dishes. This is for them.
INGREDIENTS

  1. 1 kg tail on prawns
  2. 1 medium sized onion sliced thin
  3. 2 garlic cloves chopped
  4. 1 Tbsp coriander powder
  5. 1/2 tsp turmeric powder
  6. 2 tsp kashmiri chili powder
  7. 1/2 tsp pepper powder
  8. 1/4 tsp fenugreek powder
  9. 4 to 5 small  kudampulli soaked in water
  10. 1 sprig curry leaves
  11. 2 Tbsp oil
  12. salt to taste

METHOD

  • Soak the kudampulli for at least 30 minutes.
  • Wash and clean the shrimps and keep aside.


  • Heat a non-sticky pan  on medium high heat. When it warms up , pour oil. 
  • When the oil is hot enough ,add the sliced onions and garlic into it.

  • Saute till the raw smell goes off. Now cover the pan with a lid and cook on  low heat , without stirring for 2 minutes on medium heat.Open and stir.

  • Continue this in 2-minute pulses ,until the onions are light brown and slightly caramelized.

  • Now add the coriander powder, chili powder, fenugreek powder , turmeric powder and saute for a few seconds , until the raw smell goes off.


  • Now add the kudampulli(I cut it into small pieces with a scissors.) and the prawns.

  • Give it a quick stir.


  • Now cover and cook on medium high heat for exactly 7 minutes.(No peeking!!!). If it is not a heavy bottom pan reduce the temperature to medium after 3 minutes.


  • After 7 minutes , open the lid , the prawns should have turned orange by now.

  • Add sufficient salt to the prawns , and the curry leaves ,  give it a quick stir and cook it uncovered for 1 more  minute. Any remaining liquid should dry off , by now. Turn off the stove and keep it as is, with the lid slightly opened for at least 30 minutes. It will be slightly roasted at the bottom with the remaining heat of the stove.

  • Prawns dry fry is ready to serve. Don't forget to check for salt before serving.


NOTES

  • 1 tsp kasuri methi leaves can be used instead of curry leaves.
