VENDAKA CURRY- no saute,one pot
My chechi(help) used to make this. It was my husband's favorite curry with rice.
RECIPE
- 1 cup (100 gms) ladiesfinger chopped into desired size(about 12 small okras)
- 1/2 of a medium size onion
- 1 Tbsp tamarind pulp(more , as per taste)
- 1 medium size tomato
- curry leaves- 1 sprig
- 3 green chillies deseeded
- 1 tsp coriander powder
- 1 tsp chilli powder
- 1/2 tsp turmeric powder
- 1 tsp fancy garam masala
- 1/4 tsp fenugreek powder
- coconut milk squeezed from 2 cups of grated coconut with 3 cups of water , first ,second ,third milk separated.
- 2 tsp coconut oil
- salt to taste(1-1/4 tsp)
- Dump all the ingredients except the coconut milk and tamarind pulp , into a pan. Add 1 cup water and bring to a boil. Cook till the onions are translucent.
- To this pour in the second and third milk and simmer boil.
- Now pour in first milk. Add the tamarind pulp as per taste. Turn off the stove. Check for salt and keep covered for 30 minutes before serving.
- Our Combination: Rice, Vendaka Curry , Cherupayar Thoren and Pappadam
NOTES
- The tomato can be pureed instead of sliced.
- Vinegar can be used instead of tamarind pulp.
- The ladies finger along with the rest of the ingredients can be boiled and kept ahead .The coconut milk can be poured and boiled when ready to serve.
- Instead of the tamarind pulp and tomato combination, you can use 2 Tbsp vinegar.( I use apple cider vinegar, diluted to 5 % acidity)
