COOKING KERALA RICE

kuthari , matta rice
As a kid , I used to call this red rice or kerala rice. Well now I know it has other names too -kuthari , matta rice, palagaddan matta…. I just can't do without this rice. The typical kerala curries tastes good only with this rice.
INGREDIENTS

  1. 1-1/2 cups kuthari 
  2. 9 to 10 cups water
METHOD
  • Soak the rice in water for atleast 30 minutes.


  • Wash an drain the rice. Put it in the pressure cooker with the water and pressure cook on high for 1 whistle. Turn off the stove. After 30 minutes , turn the cooker on again for 1 more whistle. When the pressure is completely out , drain into a colander.
