sauteed plantains and prawns

A little bit of cooked prawns added to this plantain sauté , adds a lot of seafood flavor . A very good side dish with Kerala Kuthari(Kerala red rice).

INGREDIENTS
  1. 2 raw plantains ,peeled and chopped
  2. 250 gms cooked prawns
  3. 2 Tbsp oil
  4. 7 garlic cloves
  5. 1/4 of a medium sized onion , chopped finely
  6. 1 tsp turmeric powder
  7. 1 tsp coriander powder
  8.  2 tsp chili powder
  9. 1/2 tsp pepper powder
  10. few curry leaves
  11. salt to taste
  12. 1 cup water


METHOD

  • Pressure cook the chopped plantains with 1 cup water and 1/4 tsp turmeric powder , on high heat for 3 whistles and turn to low heat for 5 minutes.



  • I have used pre-cooked small prawns for this.
  • Heat a wok on medium heat . When warm , add oil , when the oil is hot add the finely chopped garlic ,  onions and curry leaves. Saute till the onions turn slightly brown.


  • Lower the heat to low.Add the spice powders , starting with turmeric , coriander chili powder and pepper powder. Saute  till the raw smell goes.



  • Turn the heat to medium high.Now add in the cooked prawns . Stir well.

  • Check the plantains for salt. Add required salt before adding the plantains to the wok. The plantains wont absorb much salt after being sauteed.
  • Add the cooked plantains into the wok. Stir well and saute for a minute or 2.
  • If you are not transferring the ullarthu to a dish , keep it half covered with a lid , for 30 minutes. If you keep it fully covered , the steam won't escape and will accumulate on the lid which will fall into the plantains , making it soggy. 
  • Serve hot with rice .
