കായയും ചെമ്മീനും ഉലർത്തിയത് - sauteed plantains and prawns
A little bit of cooked prawns added to this plantain sauté , adds a lot of seafood flavor . A very good side dish with Kerala Kuthari(Kerala red rice).
INGREDIENTS
- 2 raw plantains ,peeled and chopped
 - 250 gms cooked prawns
 - 2 Tbsp oil
 - 7 garlic cloves
 - 1/4 of a medium sized onion , chopped finely
 - 1 tsp turmeric powder
 - 1 tsp coriander powder
 - 2 tsp chili powder
 - 1/2 tsp pepper powder
 - few curry leaves
 - salt to taste
 - 1 cup water
 
METHOD
- I have used pre-cooked small prawns for this.
 - Heat a wok on medium heat . When warm , add oil , when the oil is hot add the finely chopped garlic ,  onions and curry leaves. Saute till the onions turn slightly brown.
 
- Lower the heat to low.Add the spice powders , starting with turmeric , coriander chili powder and pepper powder. Saute  till the raw smell goes.
 
- Turn the heat to medium high.Now add in the cooked prawns . Stir well.
 
- Check the plantains for salt. Add required salt before adding the plantains to the wok. The plantains wont absorb much salt after being sauteed.
 - Add the cooked plantains into the wok. Stir well and saute for a minute or 2.
 - If you are not transferring the ullarthu to a dish , keep it half covered with a lid , for 30 minutes. If you keep it fully covered , the steam won't escape and will accumulate on the lid which will fall into the plantains , making it soggy.
 - Serve hot with rice .
