ONE POT CABBAGE THOREN - dump in , mix and cook
This is my new way of making cabbage thoren , which I usually make at least once a week. My cousin sister showed me this method. She slices the cabbage very fine and thin, looks like it has been grated, but NO, she takes her time to hand chop the cabbage and its a real joy to have her cabbage thoren with rice and curry.
INGREDIENTS
- 8 cups sliced cabbage
- 6 green chilies
- 1/2 tsp turmeric
- 1 tsp pepper powder
- 1 cup grated coconut
- 1/2 jeera powder(optional)
- 7 to 8 curry leaves
- 2 Tbsp of oil of any kind
- 1/4 cup chopped onions
- 2 cloves of garlic chopped.
- salt to taste
- If you have the time, hand slice the cabbage else use the food processor to chop it.
- Pulse the grated coconut in a mixer, so that you get, nice finely grated coconut.
- Dump all of the ingredients except salt, in a large saute pan.
- Using your hands, mix it all together.
- Dab the cabbage tightly using the palm of your hands.
- Cover and turn on the heat to medium, and cook for 6 minutes without stirring. The cabbage will heat up during this time.
- After 6 minutes, open the lid and give the cabbage a good stir. Dab it again with the saute spoon and cover and cook for 2 minutes.
- After 2 minutes, repeat the above step for another 2 minutes.
- After 2 minutes open the lid, increase the heat to medium-high add sufficient salt, stir well and cook for a minute.
- Turn off the stove and if you are not transferring the cabbage to another pan immediately, keep the lid only half covered. If the lid is kept tightly covered, the water that accumulates from the steam will fall into the cabbage and make it mushy.
NOTES
- I have used a 12-inch ceramic saute pan for making this and cooked it on the big burner of the stove.
- Add one carrot , finely chopped to the cabbage to add a nice color to the cabbage thoren . My cousin does this.
