MICROWAVE CHOCOLATE FUDGE PUDDING CAKE/SELF-SAUCING PUDDING CAKE

Microwave chocolate fudge pudding cake
Its a chocolate lave cake when hot , and chocolate pudding cake when warm. I always wanted to make a chocolate lava cake  but now I am not making one . This is all in one.  Its made in the microwave . A fast and easy dessert to make when you have unexpected guests. And its vegan. What more reasons do you need. Its our new favourite Saturday dessert after lunch.
The person who came up with this recipe is a real genius. Cooking cake batter and chocolate syrup together , a genius idea indeed.
I found this recipe here . I am so glad I found it. As usual I tweaked it a little bit and used whatever I have in my pantry. I have used a 900 Wattts microwave oven .

RECIPE

  1. 3/4 cup all purpose flour
  2. 1 cup granulated sugar
  3. 1/2 cup unsweetened cocoa powder
  4. 1/2 tsp baking soda
  5. 1/2 tsp salt
  6. 2/3 cup water plus 1 cup water
  7. 1/4 cup oil 
  8. 1 tsp vanilla extract (optional)


METHOD
  •  In a big microwaveable bowl mix;
  1. 3/4 cup flour
  2. 1/4 tsp salt
  3. 1/4 cup cocoa powder
  4. 1/2 tsp soda powder
  5. 1/2 cup sugar

  • Now into the bowl with mixed in dry ingredients add:
  1. 2/3 cup water
  2. 1/4 cup oil

  • In a 2 cup glass measuring cup mix
  1. 1/2 cup sugar
  2. 1/4 cup cocoa powder
  3. 1/4 tsp salt
  • Microwave 1 cup of water for 1 minute on 100% power and  gradually pour into the measuring cup with the mixed in dry ingredients , mixing the cocoa sugar mixture until well combined. Use a wire whisk or a spoon. 

  • Microwave this liquid again for 1 minute on 100%(high) power.
  • Take this out and pour this on top of the batter in the bowl.
  • Microwave this for 4 minutes on 100 %(high) power .Don't take it out
  • Keep it in the microwave for 30 minutes.
  • Take it out after 30 minutes. It looks like this.
  • Use a steel spoon to scoop it out. Serve hot with ice cream.





NOTES

  • I did'nt use vanilla essence. I don't use essence in recipes which call for atleast 1/4 cup of cocoa powder. Vanilla essence is completely optional.
  • Take a big bowl , otherwise the batter might overflow while cooking.
  • Swap 2 Tbsp of flour for 4 Tbsp of almond powder for an extra crunch.
  • If you want more cake and less syrup use a wider bowl like the above. If you want more syrup and less cake use a deeper bowl like the one shown below.
