ORANGE/LEMON PEEL
Grating the orange rind was so difficult until I started using this method.

- Freeze washed and pat dried oranges(preferably wax free) in a zip-loc bag. (Use a dish wash scrub to scrub and clean the oranges while washing)
- When completely frozen take it out and grate the whole orange. If you hands becomes cold return the grated orange and the partly grated orange to the freezer. Continue grating later when you get time.
NOTES
- Use wax free lemon and oranges.
- Lemons as well as oranges available in stores are coated with food grade wax. I went on a search , to all the specialty and organic stores that sells lemons and oranges otherwise but couldn't find them. So I soak the lemons and oranges in water to which salt and a pinch of turmeric is added. Soak it overnight and scrub the lemons and oranges with a dish scrub and the freeze it.
- Use small oranges with very thin skin. I have used small mandarins.
- Lemons can also be grated the same way. I have not tried grating limes though.
- Use it in cakes and to make orange chicken and lemon chicken.
- If the recipe calls for 1 Tbsp rind substitute 1 Tbsp of the whole grated lemon or orange peel.
- If a recipe calls for 1 Tbsp juice substitute 1 Tbsp of the whole grated lemon or orange peel.
- Don't try to grate the whole lemon or orange in one go , your hand will will freeze. Do it little by little , or even better, in a span of a few days.
