CABBAGE STIR FRY with coriander leaves
I used to make cabbage thoren all the time. This cabbage stir fry was introduced to me by my husband's cousin sister. She had made prawns and bacon fried rice and this cabbage stir fry was the side dish to that. Had never tried this combination. Surprisingly the cabbage turned out to be a very good side dish to the rice.

- 8 cups thinly sliced cabbage
- 1/4 of a medium sized onion , sliced thinly
- 4 garlic cloves, sliced thinly
- 3 green chilis , slit
- handful of coriander leaves, chopped
- 1/4 tsp turmeric powder
- 2 Tbsp oil
- salt to taste
METHOD
- Prep the ingredients.
- Heat a pan on medium-high heat.When warm , add the oil , when the oil is hot , add the onions, green chilis and garlic , saute.Saute , until the onions turn translucent.
- Then add the turmeric powder.Stir , then add the cabbage , add salt and stir well. Maintain the same heat, saute the cabbage for a minute. Then dab the cabbage and keep covered for 2 minutes.
- If the cabbage sticks to the bottom , lower the temperature. Dab and keep again for 2 minutes.Repeat this until the cabbage is semi-cooked. Then turn on the heat to medium-high heat. Stir the cabbage , turn the heat to high , stir the cabbage. Stir well and cook until the cabbage is cooked through . Turn off the heat and garnish with chopped coriander leaves.
- Don't close the lid tightly, keep it half open or the cabbage will turn mushy.
