CHEELE/CHILLA
This is also called a vegetable omelet. It's a north Indian bread. When dosa batter is over and there is chutney leftover, then I make this.

- 1 cup gram flour ( kadala maav , besan)
- 3/4 cup water
- salt to taste- 1/4 tsp plus more per taste
- 2 Tbsp chopped onions
- 1 small chili, finely chopped
- a few curry leaves/coriander leaves chopped
- oil as required(optional)
METHOD
- Put the flour in a bowl along with the salt. Gradually add water, while stirring the batter to avoid any lumps. Decrease or increase the water as per the required consistency. Leave the batter for at least 30 minutes.
- After 30 minutes, add the rest of the ingredients.
- Heat a tawa on medium-high heat, when hot add a ladleful of the batter. Rotate the tawa or spread the batter with the ladle. Add a drizzle of oil if required. Cook and cook for about a minute. After a minute, turn it over to the other side and let it cook. Do not cover and cook this time. Alternate the heat between medium-high and low to maintain the right temperature.
- Serve it with chutney. Pairs well with Onion Chutney.
