RAVIOLI WITH MUSHROOMS AND SPINACH
Bow tie pasta or Ravioli can be used for this.I like to make this with the roasted cauliflower and cheese ravioli from Trader Joes's.This is a very rich dish with butter in the sauce.So I make this dusring the winter time.
INGREDIENTS
- 2 Tbsp. butter
- 1 Tbsp. all-purpose flour
- 1 cup milk
- 1/2 tsp black pepper
- 2 Tbsp. chopped onions
- 1 small garlic , chopped
- 1 cup sliced mushrooms
- 2 handful spinach , chopped
- 1 tsp lemon juice
- 1/2 tsp Italian seasoning
- salt to taste
- 1-1/2 cups cooked pasta(1 cup before cooking) or 250 gms Ravioli
METHOD
- Cook the pasta and keep aside.
- Prep the ingredients 5-8 and keep aside.
- Melt the butter in a pan. Add in the onions .Let the onions start to brown a little ,then add the garlic, sauté for a few seconds ,then add the mushrooms. Sauté for 2 minutes on medium heat.
- When the mushrooms are sauteed ,add sufficient salt. Stir well.Then add the flour. Reduce the heat and cook , stirring till the raw smell of the flour disappears and the flour is cooked.(about 2-3 minutes).Then add the chopped spinach.(The picture shows otherwise ,but don't follow that)
- To this add italian seasoning ,pepper and stir well.
- To this add 1/4 cup milk. Stir well. Then increase the heat to medium heat and add in the rest of the milk. Cover and cook till the milk thickens.
- Add the lemon juice 1/4 tsp at a time . Taste and then add as required.Turn off the stove and keep aside.
- Cook the pasta as per instructions.Drain and add in the pasta to the sauce. Turn off the stove.Stir well Check for salt.
NOTES
- For double the amount of pasta/ravioli , just double the amount of milk and the seasonings.Keep the amount of butter,flour and veggies the same.
- The tang of the lemon juice brings a nice cheesy taste to the dish.
- The onions and garlic can be sauteed first , till brown and the the mushrooms can be added.
