നെയ്യ് - GHEE/CLARIFIED BUTTER
Homemade butter is melted , till the the solids separate , and what remains is a golden yellow oil. The aroma that comes when butter is melted to form ghee is very enticing. A spoonful of ghee mixed with hot steaming rice is very tasty. My mother would always have a bottle of homemade ghee in her pantry.

- Put the butter in a pan or wok and heat it on medium heat.
- When all the butter has melted , the butter will begin to froth ,and you will hear rapid popping sounds as the moisture evaporates and the solid separates.No need to decrease the heat.
- Keep stirring it in between , so that the solids does not burn at the bottom .When the popping sound decreases ,turn off the stove. The butter will still cook and turn into a deep golden color .
- Allow it to cool and using a strainer , transfer it to a dry jar.
- Ghee does not need refrigeration and has a long shelf life.
