CAULIFLOWER RICE STIR FRY
We have rice for lunch and dinner. A vegetable side dish is always necessary along with the rice. I was out of ideas for a vegetable side dish. That's when I found this frozen cauliflower rice in Costco. When I am out of fresh vegetables , I make this stir fry.

- 4 cups frozen cauliflower rice( I have thawed it half way through)
- 1-1/2 cups finely chopped onions
- 6 garlic cloves finely chopped
- 3 green chilies , finely chopped
- curry leaves, chopped
- 2 Tbsp. oil
- 1/2 tsp turmeric
- 1/2 tsp garam masala
- 1 tsp coriander powder
- salt to taste
METHOD
- Chop all the ingredients finely and keep aside.
- When everything is ready , heat a pan , when the pan is warm , add the oil , when the oil is hot , add the ingredients 2-5. Saute until the onions turn slightly brown.
- Reduce the heat and add the powders 7-9. Stir and saute' until the raw smell goes away.
- Now add increase the temperature to medium high and add in the cauliflower rice. Stir well.
- Dab the cauliflower well with the back of the spoon , cover it with a lid and cook for 2 minutes. Open stir , dab it again and cook again for 2 minutes. Repeat for 1 more time . This is the same method used for making cabbage thoren.
- Open the lid , add salt ,stir on high for a minute and turn off the stove. Don't cover the pan fully with the lid. Keep it half open , till all the steam disappears. If the pan is fully covered , the cauliflower will cook more under the retained steam and become mushy.
- Keep aside for atleast 30 minutes .Check for salt . Serve with rice and curry.
