RAJMA TACOS

 

It is often said that one should have breakfast like a king, lunch like a queen, and dinner like a pauper. However, in today's lifestyle, it can be challenging to follow this nutrition rule as it contradicts the idea of going to bed early and waking up early. But if one does follow this routine, they will surely be able to have a hearty breakfast. I always feel hungry in the morning and enjoy having a full-course breakfast. Recently, I discovered Rajma Tacos, which are fulfilling and keep me satiated until lunchtime, preventing me from snacking on sugary treats. 

INGREDIENTS

Corn and Wheat tortilla: I buy it from Trader Joe's (see Notes)

For the Rajma 

  1. 1 cup rajma/brown beans soaked overnight
  2. 1 tsp salt
  3. 2 tsp chili powder
  4. 40 gms. onions chopped
  5. 4 garlic cloves
  6. 2 Tbsp oil
  7. 2 cups water
  8. 1 Tbsp. coriander powder
  9. 1 Tbsp. cumin powder
  10. 2 tbsp oil
For the Guacamole 
  1. 1 avocado, medium size(1 medium size avocado is 156 gms. appr) after skinning it and deseeding it, it is 100gms. 
  2. 2 Tbsp. onion, finely chopped
  3. 1 green chili, seeds removed, finely chopped
  4. 1 Tbsp. cilantro
  5. 1 Tbsp. lemon juice or as per taste
  6.  1/8 tsp salt

METHOD

Make the Guacamole

  • Scoop out the avocado. 
  • Add the rest of the ingredients and mash the avocado with a fork. 
  • Refrigerate and use. 

For the Rajma 

  • Wash and drain the rajma. Add this to a pressure cooker with 2 cups of water and salt and pressure cook for 15 minutes. Turn off the stove, let the pressure release naturally, and then pressure cook again for 5 minutes. This is how I cook Kabuli channa. The exact cooking time applies to rajma. 

         
      
        


  • Heat oil in a kadai. Saute onions and garlic. Add spice powders and saute. Then add beans, cover, and cook until desired consistency. I like a curry consistency.







  • Warm the tortillas per instructions, put a layer of rajma and guac, and serve. 

NOTES
  • If cooking in an instant pot, reduce the water by 1/2 cup.
  • I buy corn + wheat tortillas from Trader Joe's. I have tried corn tortillas, but that's too thick and hard. Whole wheat tortillas from Trader Joe's tastes raw and chewy.
