PAN ROLL

love letter , soft dosa

I know 3 names for this sweet snack. In my house we call it ," Pan Roll" , my husband calls it, "Soft Dosa", and in my hostel , it was known as ," Love Letter". It's a famous tea time snack . It's basically crepes filled with sweetened , grated coconut and rolled .Kids love this !

INGREDIENTS - Makes 6 , 10 " thin crepes
  1. 1/2 cup flour
  2. 1 egg 
  3. 3/4 cup milk
  4. 1/4 tsp plus 1/8 tsp salt
  5. oil

FILLING

  • 1/2 cup coconut
  • 2 Tbsp sugar
METHOD
  • Beat the egg plus 1/4 cup milk. Then add in the flour. Stir  well. There won't be any lumps in the batter because the flour is mixed the right amount of liquid. 






  • Then add in the rest of the milk , while gradually stirring. Rest the batter for atleast 30 minutes.






  • Meanwhile prepare the coconut filling. Mix sugar with the grated coconut and keep aside
         

          




     Making the Crepes 

  • Set up 2 plates , one plate to hold the crepe ,add the filling and roll it and another plate to hold the rolls.

  • Heat a 10 inch , non-sticky pan on medium heat. Add a tsp of oil and spread it around. 

  • My ladle holds about 1/4 cup of the batter. Pour a ladleful of the batter into the pan . Rotate the pan to spread the batter. Cover with a lid , turn the heat to medium-low and cook covered for 1 minute.






  • After 1 minute turn the heat to medium and open the lid , the crepe will be cooked by now. No need to turn it over.
  • The crepes are very thin and delicate , so I release the crepes from the edge and fold into half and then into quarter and take it off of the pan.This is the easiest method to take out the crepes.






  • Pour another ladleful of the batter , turn the heat to medium-low and cook for 1 minute.Frequent oiling is not required. Only if the crepes start to stitck to the pan , oil the pan for the next crepe.
Meanwhile open up the crepe ,fill the crepes , roll it and transfer to another plate.







  • Continue making the rest of the crepes . 
  • Enjoy it as an evening snack.
