VEGETABLE BAKE with GARLIC BREAD CUBES
Bought a packet of "Cauliflower Bites " , from Costco. Could'nt believe that it was baked.It was crispy and very tasty. So I tried to bake cauliflower , and expected the same crispy effect. The taste was good , but the crispiness was missing. So from an effort to make crispy cauliflower , was born this dish ," Vegetable Bake with Garlic Bread Cubes".
INGREDIENTS
Vegetable Bake
- 500 gms cauliflower ,florets separated
- 300 gms potato cooked with skin
- 1/4 os a big onion cubed
- 1/4 of a red capsicum ,cubed(green capsicum or zucchini squash can be used)
- 2 Tbsp. oil
- 1/2 tsp salt
Garlic Bread Cubes
- 2 bread slices(75 gms)(cubed)
- a pinch of salt
- 1/2 tsp Italian seasoning
- 2 Tbsp. oil
- 1 pod garlic cloves , chopped
- 1/4 pepper powder(optional)
- Wash the potatoes.Cube it into big chunks. The skin can be kept on.Bring 6 cups of water to a boil. Salt it. The water should salt like the ocean.Then put the potatoes and bring it to a boil. Drain and let cool.
- Pre-heat the over to 450 degree F for 15 minutes.
- Wash and drain the cauliflower florets.Cube the onions and bell peppers. Put it in a bowl. Add 1/4 tsp salt and 1 Tbsp oil and stir well.Then add the potatoes , remaining 1 Tbsp oil and stir well until the oil coats all the vegetables.Mixing in the bowl first makes sure the salt is evenly distributed.
- Spread the veggies on a tray .Bake at 450 for 25 minutes.
- After taking the baked vegetables from the oven , keep it in the tray for another 5-10 minutes. The veggie will still be roasting in the heat.
Garlic Bread Cubes:
- Cube the bread and toast the in a pan until brown.
- Remove the bread cubes and keep aside.
- In the same pan add oil and when the oil is hot add the chopped garlic.The garlic just need not brown.Turn off the stove , throw in the italian seasoning and peeper , if using.
- Thrown in the toasted bread ,into the pan.
NOTES
- Add 2 tsp coriander powder,1 tsp cumin powder , a pinch of chili powder and 1/4 garam masala to the veggies for an Indian twist.
