VEGETABLE CHEESE SANDWICH


If you feel that a cheese sandwich is not filling enough, stuffing it with veggies will help. This sandwich is easy to make and a good, filling snack. It's a regular on weekends. 
INGREDIENTS
  1. 1 cup each of finely chopped onions (60 gms.) and mushrooms (100 gms.)
  2. 1/2 cup finely chopped capsicum(60gms.) 
  3. 1/4 tsp each of pepper powder and Italian seasoning
  4. 2 tsp oil
  5. Cheese slices(optional)
  6. tomato ketchup 
  7. Butter for toasting
  8. salt to taste - 1/4 tsp (go easy on the salt; if you are adding cheese to the sandwich later on, you can skip the salt if the cheese is salty)
METHOD
  • Heat a sauté pan on medium-high heat. When warm, add oil. When the oil is hot, add the onions and mushrooms. Sauté for a minute or two. 





  • Then add the chopped capsicum. Saute a bit, then add salt, pepper and Italian seasoning. Saute for a bit and turn off the stove, keep the pan  
                                           

  • Keep the pan aside. 
  • Heat an iron griddle on medium-high heat. When warm add small cubes of butter. 




  • When the butter melts, add slice of bread. Top the bread with the sauteed vegetables. Dot the vegetables with tomato ketchup.  Top the vegetables with cheese slices. Cover the top with another bread. 





  • Turn over the sandwich and toast the other side. 



  • Cut into half and serve.
