STOVE TOP APPLE PIE
Occasionally , after lunch , there comes a craving for something sweet , which just won't go away. I try to satisfy this craving with an orange or grape, but it just won't go away. At times like this , I love to eat the sweet jaggery-coconut mixture that's used in kozhukatta. When that's not available , this stove top apple pie is next on my list. It's crunchy and has the right amount of sweetness , and best of all , its quick.
The amount of sugar mentioned ,is the minimum that needs to be added. I tried skipping the sugar , but it's no good.
INGREDIENTS
For the crust
- 1/2 cup oats
- 1-2 tsp. brown sugar
- 1/4 cup chopped nuts of choice(pecans,almonds,cashews or pistas)
- 1 Tbsp butter
Apple filling
- 1 big apple , peeled , sliced into sixteenths(appr. 170 gms. before peeling )
- 1/4 tsp cinnamon
- 1/4 tsp vanilla essence
- 1 tsp. cornflour
- 2 tsp. sugar
- 1 tsp. lemon juice
- pinch of salt
METHOD
- Take 1/2 cup oats and keep aside.Keep the sugar, nuts in a pan. Combine the ingredients for the apple filling and keep aside.
- Heat an 8 inch non- sticky pan. Melt the butter.
- Add the oatmeal and cook for 2 minutes.
- Then put in the nuts, sugar and salt into the pan. Cook, stirring constantly ,until lightly browned.
- Transfer to a bowl and let cool.
- Return the pan to the stove. Turn the heat to medium -low and put in the apple mixture and cook , covered for 5-7 minutes until the apples are stewed.
- When the apples are done to your desired consistency , turn off the stove and let cool in the pan.
- Transfer to a bowl only after cooling down.
- Scoop out some apple filling into a bowl , top it with the oats crumble and enjoy it warm or cold.
NOTES
- The apple compote is only 1/2 cup when cooked but the amount of oats topping is more. It can be stored in a air tight box at room temperature.
