STIR FRIED PANEER WITH BELL PEPPER
This recipe is from the book "My Indian Kitchen ", by Hari Nayak. This is a good side dish for pulav and chappathis.
INGREDIENTS
- 1/2 cup paneer , cubed
- 1 small onion , finely chopped
- 2 tomatoes , chopped
- 2 tsp ginger-garlic paste
- chopped coriander leaves
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- chili powder as per taste
- 1 tsp kasuri methi
- 1/2 tsp garam masala
- 1/2 of a small capsicum(bell pepper), chopped into big chunks
- 1/2 of a small onion , chopped into big chunks
- 2 Tbsp. oil
- salt to taste
METHOD
- Heat oil in a sauté pan. When the oil is hot , add the finely chopped onions and ginger-garlic paste. Sauté till the raw smell of the ginger-garlic paste goes away.
- When the onion mixture is well fried , add the spice powders(6-8). Give it a quick stir and quickly add the tomatoes. Sauté till the tomatoes are mushy.(about 5 minutes)
Now add in the paneer and garam masala. Stir , add salt and let the onion-tomato masala coat the paneer.(about 5 minutes).
- Now add in the kasuri methi , coriander leaves ,onion and capsicum chunks. Turn off the stove. Cover and keep for 30 minutes.
