VEGETABLE WAFFLES
INGREDIENTS
- 1 cup grated potato
- 1/2 cup grated carrots
- 1/2 cup grated Zucchini squash or cauliflower rice or grated butternut squash
- a small amount of very thinly sliced onions
- chopped coriander leaves
- 1/8 tsp each of garam masala and cumin powder
- 1/2 tsp chili powder
- 4 Tbsp oil
- 1/4 cup chickpea flour(besan , kadalamav)
- salt to taste
METHOD
- Take out and keep the waffle iron ready.
- In a wide bowl , put all the ingredients from 1 to 8. Using your hands gently mix it.
- Add chickpea flour , just enough , so that the grated vegetable starts to stick together. Add salt. Gently mix it using your hands.
- Heat the waffle iron on medium high until ready.
- Close the iron and cook on medium-high heat for a minute . Then turn the knob to medium heat and cook for 3 minutes , turn the knob again to medium-high and cook for 2 minutes.
- The waffle will ready by now. Take it out using a spatula.
- If the prepared waffle is not holding its shape after baking , add a little more flour(chickpea flour) , to the vegetable mix.
- If the batter is too thick try adding a little bit of water.
- Don't add a lot of flour. The flour is required just to bring the vegetables together.
- Small waffles works best for me, rather than widespread ones. I have tried that and and bigger ones are not crispy and don't cook evenly.
