ONION-CARROT SALAD

 We used to buy chicken tikka from a restaurant ,Kalavara , in Trivandrum. The tikka was accompanied by mint chutney and this onion carrot salad. It was our favourite. The carrots in the salad were finely julienned and also long. It tasted so good with the smoky flavored chicken tikkas.


RECIPE

  1. 1 big onion
  2. 1 medium size carrot
  3. 1 green chili
  4. 1 tbsp. lemon juice
  5. salt to taste

METHOD

  • Slice the onions very thin. It can sliced in the food processor.
  • Shred the carrots in the food processor. Or if the option is not there ,peel the carrots into thin slices , stack it up and chop it into very thin matchstick pieces.




          

  • To remove the heat from the onions and to get the carrots fresh and crisp , soak both the sliced onions and carrots in ice cold water for 30 minutes.
  • After 30 minutes squeeze out the water and place it in the bowl.
  • Add thinly sliced green chili, salt .Squeeze and mix well. After getting the salt right ,add the lemon juice.Keep in the fridge for atleast 1 hour.
  • Tastes best the next day or better yet two days later.

  • Serve with chicken tikka.
