MOTTA THOREN


                                   motta thoren with spinach
The name is rather misleading. It does not have coconut in it ,although you can add coconut if you want to. Its a nice way to sneak in lots of spinach into the eggs.

RECIPE
  • 3 to 4 Tbsp of chopped onions
  • 2 green chilies,  chopped
  • 2 handful of baby spinach, chopped finely
  • 3 eggs
  • salt
  • 2 tbsp. oil

METHOD
  • Chop the spinach very finely.


  • Crack 3 eggs into a bowl ,add salt and beat it.
         

  • Add the chopped spinach into the beaten eggs and mix.

         





  • Chop the onions and green chillies.


  • Heat a pan ,add in the chopped onions and chillies and oil.


  • Saute' until slightly brown.



  • Add the spinach egg mixture.



  • Scramble the eggs until the desired consistency.
         
         

  • Motta thoren is ready. Good with just plain rice ,if you don't have any other curry.
NOTES

  • The amount of green chilly and onions are optional.it can be increased or decreased according to one's choice or how much amount of thoren you want.
  • Adding coconut to the sautéed onions gives a nice taste.
  • If you don't like too much of spice ,deseed the green chillies and use. To deseed the chili ,just slit it open and scrape out the seeds  with the tip of the knife.
