CORN SALAD FOR SALMON FISH CAKES
Pairs well with
salmon fish cakes
.
INGREDIENTS
100 gms. frozen corn
60 gms. onion chopped
1 tomato
coriander leaves chopped
1 green chili deseeded
salt to taste
lemon juice
METHOD
Bring 4 cups of water to a boil. Put in the corn. Bring to a boil and drain
.
Add the rest of the ingredients and mix well.
NOTES
Cooking the corn in boiling water really brings out the yellow color while making it softer as well.
