BOMBAY SANDWICH

vegetable sandwich,chutney sandwich


My mother used to make this as after-school snacks. We used to call this chutney sandwich. It's also known as Bombay Sandwich.


FOR THE CHUTNEY

  1. 1/2 cup shredded coconut(40 gms)
  2. 2 Tbsp. chopped coriander and mint leaves
  3. 1 green chili , seeds removed
  4. 1 Tbsp. chopped onion
  5. 1 small piece ginger
  6. a few slices of apples(imparts sweetness) or sugar
  7. salt to taste(1/8 tsp) go easy on the salt
  8. water(2 Tbsp. hot water)
  9. 1/4 tsp lemon juice(optional)
  10. slices of cucumber, tomato, onions , capsicum , very thinly sliced
  11. Butter ,softened for applying on bread
  12. salt and chaat masala for sprinkling(optional), but tastes good


METHOD


  • Put all the ingredients(1-8), in the mixie and grind to a coarse paste. Add more water only if required or else the chutney will become very drippy. My chutney is drippy , shown in this photo. You do not want a drippy chutney.




  • Gather all the ingredients together.Butter the bread.Apply the chutney on the slices. Then layer the slice with slices of thinly sliced cucumber and tomato. Sprinkle with salt and chaat masala , if needed.

       

       






  • Cover it with another chutney slathered bread.

NOTES
  • Instead of applying butter inside the bread , try applying it outside and toast the sandwich. It's even tastier.
  • Good for 2 big sandwiches
  • Good for school and office snacks
  • Don't add a lot of water initially. The chutney should not be very wet. It always happens for me.
  • It doesn't matter if the salt is not very accurate. There are other fillings in the sandwich , so it doesn't matter.
  • Add a 2 slices of apple to chutney while grinding, to give it a sweet taste.
