വെള്ള കടു മാങ്ങാ - mango pickle
This tastes best with kanji and cherupayar thoren. Kanji and cherupayar thoren is my comfort food. This pickle can be made in a jiffy and can be eaten as soon as its made.

- 1 cup chopped mango with or without skin
- 1/2 tsp mustard seeds
- 1/4 tsp fenugreek seeds
- 2 garlic cloves , halved
- few curry leaves
- 1/2 cup water
- a pinch of turmeric
- 1 green chili , sliced into round pieces
- salt to taste(1/4 tsp)
- 2 tsp oil
METHOD
- Heat a wok(cheena chatti). When warm, add oil. When the oil is hot, add the mustard and fenugreek seeds. Let it splutter. Then add the garlic and green chili. Fry the garlic and chili for 30 seconds. Then add a pinch of turmeric.
- Add the water. Let it boil. Add curry leaves. Add sufficient salt. Dump in the chopped mango pieces. No need to boil the mangoes.
- Let it cool. Check for taste, add salt if necessary. Then transfer to a pickle jar. As I said , tastes great with kanji and cherupayar thoren.
