SEPARATING EGG YOLKS FROM WHITES
Most of the cooking videos shows the method of separating an egg by tossing the yolk back and forth from one shell to another. I don't have the confidence to try that lest the sharp edges pierce the egg yolks. Using hands is my best and foolproof way of separating eggs.
Things required:
- eggs
- 3 bowls
- fork for cracking the egg open
Method
- Always use clean , dry bowls for the egg whites , without any hint of fat.
- Crack open the egg using a fork. Wipe clean the shells of the egg using your thump. My mother always does this. She often says that a lot of the white remain in the shells . Do not waste that.
- Using your hands fish out the egg yolk and put it in another bowl.
- Transfer the egg white into a separate bowl.
- Do not crack open all the eggs first and then start to separate. Crack open an egg into a bowl , fish out the yolk with your hand , put it into a separate bowl , transfer the white into another bowl and then continue with the next egg. Always break each egg separately . If you crack all the eggs together in one go , if there is one spoiled egg or if the yolk cracks then separating the eggs will be of no use. Never make this mistake. Even a little bit of the yolk will prevent the whites from whipping stiff.
NOTES
- I take out the eggs the eggs from the refrigerator and separate . If it's room temperature eggs , be more gentle with it.
